Put the rose petals into the hot sugar syrup. Stir to combine. Simmer the rose petal jam for 30 minutes. Five minutes before the end of cooking, add citric acid.

After this time, the jam will not be as thick. After the rose petal jam has cooled completely, bring it to a boil and cook for another 15 minutes. Boiled twice, rose petal jam will become much thicker. The structure of the petals will be clearly visible, and the jam itself will be similar in thickness to liquid honey.

Ready-made jam can be prepared for the winter, but since it is difficult to collect too many rose petals at once, it is usually not possible to make a large portion of jam at once. As with any other jam, the jar(s) should be sterilized in boiling water, over steam, or in the oven. Any type of lid should also be sterilized in hot water.

If you are not going to make rose petal jam for the winter, then it can be stored in a jar with a hinged lid. For a variety of flavors, you can add lemon, star anise, cloves, cinnamon, strawberries, and honey to the jam. Enjoy your appetite.
