Ingredients for 4 servings:

  • 500 g beef roulade(s)
  • oil
  • 4 onions
  • 200 g bacon, diced
  • 2 gherkins
  • 2 tbsp mustard
  • 750 ml broth
  • 150 ml red wine
  • possibly cream
  • salt and pepper
  • possibly cornstarch

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Cut the roulades into thin strips. Fry in batches in hot oil and remove from the pan. Add the diced bacon to the pan and sauté. Then add the sliced ​​onions and sauté everything together. Add the roulade strips back in, deglaze with red wine and stock. Now add the diced gherkins. Stir in the mustard and season with salt and pepper. Simmer everything over low heat until the meat is tender. Thicken with cornstarch if desired and refine with cream.
