Salmon Fillet Rolls with Wasabi Puree, Fried Sugar Peas and Cherry Tomatoes

for the wasabi puree
- 400 g Floury potatoes
- 150 ml Milk
- 1 tbsp Butter
- Salt and pepper
- 1 tbsp Wasabi cream
for the salmon rolls
- 2 piece Salmon trout fillet
- 4 disc Ham
- 0,5 piece Paprika
- Salt and pepper
- 1 tbsp Vegetable oil
- 1 tsp Butter
for sweet peas and cherry tomatoes
- 120 g Sweet peas fresh
- 8 piece Cherry tomatoes
- 1 tsp Butter
- Salt and pepper
Preparation of the wasabi puree
- Peel, wash and dice floury potatoes. Put the potato cubes in a saucepan, just cover them with cold water and cook until cooked for about 20 minutes. Then drain the water and let the potatoes evaporate a little
- In the meantime, bring the milk to the boil in a small saucepan with salt, pepper and butter. Mash the potatoes with a potato masher, adding hot milk over and over again, until the consistency of the puree matches your personal taste. Add wasabi (to taste) and stir the potato mixture with a whisk until smooth, season again if necessary.
Preparation of the salmon fillet rolls
- Hold the salmon trout fillets under cold water and pat dry, removing any bones that may still be present. Halve each fillet, season with salt and pepper. Top each fillet with ham (I used Serrano ham). Clean and wash the peppers, cut into thin strips and place on top of the fillet. Roll up the salmon trout fillets and secure with a wooden skewer (toothpick).
- Heat the vegetable oil in a pan and fry the salmon rolls on all sides. about 1 minute per side. Remove the pan from the heat, add 1 teaspoon of butter and cover for 3 minutes.
Preparation of the sugar peas and cherry tomatoes
- Wash, pat dry and thread the sugar peas. Wash and dry cherry tomatoes.
- Heat butter in a pan and fry the sugar peas in it for about 4 minutes, turning every now and then. Shortly before the end of the cooking time, add the cherry tomatoes, immediately reduce the heat so that the tomatoes are only heated. Then swirl the pan for about 1 minute. Salt and pepper the vegetables.
Serving
- Place a bed of wasabi puree on each of the preheated plates and place the salmon trout rolls in the middle. Arrange the sugar peas and cherry tomatoes on the side.
