Ingredients for 2 servings:
- 500 g asparagus, green
- 2 salmon fillets, 125 – 140 g each
- 100 g cherry tomatoes
- 4 tbsp olive oil
- Salt and pepper from the mill
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes
Wash the asparagus and peel the lower third. Cut the asparagus lengthwise into diagonal pieces, leaving the heads larger. Wash and halve the tomatoes. Fry the asparagus in a non-stick pan with 4 tablespoons of oil for about 4-5 minutes on all sides. Add the tomatoes and fry for another 1-2 minutes. Divide between two plates. Meanwhile, season the salmon fillets with salt and pepper. Fry in oil on all sides for about 5 minutes. Place the salmon fillets on the asparagus and serve.
