Salmon with black noodles

Ingredients for 4 servings:

  • 500 g pasta, black (e.g. Tonnarelli)
  • 4 tbsp olive oil
  • 1 onion(s)
  • 1 garlic clove(s)
  • 200 ml white wine
  • 100 ml cream
  • 1 tbsp porcini mushrooms, marinated in olive oil
  • 1 tsp dried Italian herbs
  • 250 g salmon fillet(s), fresh
  • e.g. Parmesan, freshly grated

Working time approx. 25 minutes; Total time approx. 25 minutes

Tonnarelli with squid ink

Peel the onions and garlic and chop finely. Cut the fresh salmon into thicker cubes. Sauté the onions and garlic in heated olive oil until translucent. Add the salmon and porcini mushrooms and fry. Season with salt, pepper, and the Italian herbs. Add the white wine and cream and reduce until creamy. Meanwhile, cook the pasta in salted water according to the package instructions for about 6-8 minutes. Arrange the pasta and salmon together in a deep dish and serve immediately. I recommend garnishing with freshly grated Parmesan cheese. This can be prepared quickly.
