Salmon with miso sweet potato puree

Ingredients for 2 servings:

  • 200 g salmon
  • 50 ml soy sauce
  • 90 g organic lemon(s)
  • n. B. Honey
  • 450 g sweet potatoes
  • 30 g ginger
  • e.g. chili sauce
  • 100 g onion(s)
  • 150 g mushrooms
  • some butter
  • n. B. garlic
  • 1 spring onion(s)
  • 25 g miso paste
  • Oil for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Peel the sweet potatoes, cook in a steamer for 10 minutes, and mash with a little butter. Dice the onions and sauté in oil. Add the miso paste and half of the finely chopped ginger, and mix everything with the sweet potato mash. Finely chop the mushrooms and spring onions and sauté them together. Sauté the salmon and brush with a mixture of soy sauce, honey, chili, lemon juice, garlic, and the remaining ginger. Serve everything together.
