Salsify and cauliflower in curry sauce

Ingredients for 4 servings:

  • 1 cauliflower
  • 300 g salsify(s) in a jar
  • 2 tbsp butter
  • 1 tbsp curry powder
  • ¼ liter vegetable broth
  • 100 g sour cream or sour cream

Instructions

Working time approx. 12 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 22 minutes

simple and vegetarian

Cut the cauliflower into florets and simmer gently in salted water for 4-5 minutes. Remove the salsify from the jar and empty it into a sieve to drain. Heat the butter in a pan or wok and briefly toast the curry powder. Stir in the vegetables and toast lightly, then pour in the broth and stir in the sour cream. Finally, season with a little soy sauce. If you don’t want to miss out on meat, you can of course add sausages to the pan (see photo). Rice makes an excellent side dish.
