Salsify and orange soup

Ingredients for 4 servings:

  • 2 shallots or 1/2 onion
  • 1 garlic clove(s)
  • 1 can of salsify
  • 1 organic orange(s)
  • 400 ml vegetable stock
  • 250 ml cream
  • 1 tbsp crème fraîche
  • salt and pepper
  • butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Finely chop the shallots and garlic clove and sauté in butter. Add the salsify (chopped) and its juice, along with some grated orange zest and the orange juice. Pour in the vegetable stock and let the soup simmer for 10 minutes. Finally, stir in the cream and crème fraîche and purée the soup. Season with salt and pepper. Toasted white bread cubes make a delicious garnish.
