Ingredients for 4 servings:

  • 250 g flour, type 405
  • oil
  • Salt
  • 600 g potatoes, floury
  • 150 g cooked ham
  • 1 tsp cumin
  • 1 tsp coriander, ground
  • ½ tsp chili powder and 1/2 tsp mango powder (Amchur Powder)
  • 150 g peas, fresh or frozen

For the dough, mix the flour with 5 tablespoons of oil, 1/2 teaspoon of salt, and 1/8 liter of water and knead into a smooth dough. Cover and let rest at room temperature for 30 minutes. Meanwhile, boil the potatoes until soft, peel, and cut into small pieces. Heat 2 tablespoons of oil in a pan and fry all the spices over medium heat for about a minute. Cut the ham into small cubes and add it to the spices along with the potatoes and peas, and fry for two to three minutes. Season the filling with salt, remove from the heat, and let cool. Divide the dough into twelve portions and shape into balls. Roll each out on a work surface into a 15 cm diameter circle, cut out the circles, and place them on a pasta maker, for example. Add a tablespoon of filling to each circle and fold them together. This creates filled pastries. Heat plenty of oil in a wok and fry the pastries on each side until golden brown and crispy. Variation: You can also make the samosas with a vegetable, minced meat, or cheese filling.
