Sardines in batter

Ingredients for 6 servings:

  • 1 kg sardine fillets
  • 150 ml cider (sparkling apple wine, sidra), alternatively mineral water
  • 150 g flour
  • 3 eggs
  • 2 tsp mustard
  • salt and pepper
  • 2 pinches of baking powder
  • 1 pinch(s) of sugar
  • Fat, for frying

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

as a main course or as a tapa

Mix the ingredients for the batter thoroughly. The batter shouldn’t be too runny. Add a little flour if necessary. Dip the fillets in the batter and fry in the shortening until golden brown. Then place them on a paper towel to absorb the fat. Perfect as a tapa or as a side dish with fried potatoes, potato or pasta salad, or just as a snack.
