Sardinian potato salad

Ingredients for 4 servings:

  • 750 g potatoes, waxy
  • 1 shallot(s)
  • 2 tomatoes
  • 1 tbsp basil, freshly chopped
  • Salt
  • pepper
  • 1 tomato(s), peeled and finely chopped
  • 4 tbsp extra virgin olive oil
  • 4 tbsp black olives, finely chopped
  • 1 tbsp vinegar (wine vinegar)
  • 1 garlic clove(s), very finely diced
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes and then dice them roughly. Finely dice the shallots and slice the tomatoes into wedges, then add them to the potatoes. Now, combine the ingredients for the dressing and pour it over the potatoes. Season with salt and pepper and sprinkle with basil. This dish also works with floury potatoes; the crumbling allows them to absorb the dressing better.
