Ingredients for 12 servings:

  • 75 g cheese, grated
  • 200 g flour
  • 1 egg(s)
  • 3 tbsp sour cream
  • 1 pinch of salt
  • 4 tomatoes
  • 300 g meat sausage
  • 225 g sliced ​​cheese
  • 1 bunch parsley, chopped
  • 3 eggs
  • 125 ml milk
  • Salt and pepper, coarse
  • Fat for the mold

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

Knead the grated cheese with the flour, egg, sour cream, and salt into a smooth dough. Wrap in foil and chill for about 1 hour. In the meantime, wash the tomatoes and remove the stems. Peel the sausage. Slice both. Preheat oven to 200 degrees Celsius. Roll out the dough, line a greased springform pan with it, and form a raised edge. Cover the dough in a ring, alternating with slices of sausage, cheese, and tomato. For the topping, mix the parsley with the eggs and milk. Season with salt and pepper. Spread over the quiche and bake in the preheated oven (180 degrees Celsius fan-assisted oven) for 25-30 minutes. Sprinkle with chopped parsley if desired and serve.
