Sausage Salad With Lyoner

Try our hearty Lyon sausage salad with radishes and peppers.

Ingredients

For garnish:

  • chive rolls

For the dressing:

  • 8 tbsp vegetable broth
  • 4 tsp wine vinegar
  • Salt
  • pepper
  • 4 tbsp canola oil

For the salad:

  • 300 g of Lyoner
  • 200 grams of peppers
  • 200 grams of radishes
  • 120 grams of onion

Preparation

  1. Cut the Lyoner slices into strips.
  2. Wash the peppers, cut them into quarters, remove the seeds and membranes and dice the flesh into small pieces. Remove the greens from the radishes, wash, clean, and cut them into thin slices. Peel onions and cut them into thin rings. Pour all ingredients into a large bowl.
  3. For the dressing, in a small bowl, whisk together the vegetable stock, vinegar, and salt until the salt has dissolved. Stir in pepper and oil.
  4. Pour the sauce over the sausage salad, mix well and let stand in the fridge for about 15 minutes.
  5. Arrange the sausage salad on plates, sprinkle with chives and serve.
