Savory pancakes with cream cheese, herbs and salmon filling

Ingredients for 2 servings:

  • 180 g flour (wholemeal), of course classic flour also works
  • 2 eggs
  • 300 g herb cream cheese
  • 4 tbsp cream or milk
  • 300 g smoked salmon
  • herbs, fresh, mixed
  • ½ tsp salt
  • pepper
  • olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Mix flour, eggs, and half of the chopped herbs with several tablespoons of water until a semi-liquid batter forms. Season with salt and pepper. Heat olive oil in a non-stick pan and fry the pancakes until thin. Meanwhile, mix the cream cheese with the cream (or milk) and the remaining herbs, season with salt and pepper. Spread the herb cream over the finished pancakes and either wrap the salmon around them or arrange it decoratively on the plate.
