Scampi cheese sauce à la WW

Ingredients for 4 servings:

  • 300 g scampi, frozen
  • 1 bulb(s) of fennel
  • ½ bunch of spring onions
  • 400 ml vegetable stock
  • 2 cloves garlic
  • 2 tbsp processed cheese, 30% fat
  • 1 tbsp sauce thickener, light
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

WW-compatible, 5 points per portion, with spaghetti or tagliatelle

Heat a sheet of foil in a pan (or use 1 tablespoon of olive oil) and sear the scampi on all sides for about 10 minutes. Slice the fennel into strips and the spring onion into rings. Remove the foil and add the vegetables to the pan. Pour in the vegetable stock, bring to a boil, and simmer over low heat for about 10 minutes. Crush the garlic and add it. Stir in the sauce thickener and cream cheese, and season with salt and pepper. This dish scores 5 points per serving.
