Scampi with green asparagus and orange sauce

Ingredients for 2 servings:

  • 3 packs of scampi, frozen or better fresh
  • 3 cloves garlic
  • some chili, dried
  • 2 bunch asparagus, green
  • 10 tomatoes, dried, preserved in oil
  • ½ pack of pine nuts
  • 2 orange(s), untreated
  • 2 tbsp brown sugar
  • 1 tbsp butter
  • 1 tbsp sauce thickener

Cut the asparagus into diagonal pieces and fry in olive oil, then add the sliced ​​sun-dried tomatoes. Meanwhile, toast the pine nuts and fry the scampi with garlic and chili. For the sauce, caramelize the sugar (simply heat it in a pot or pan and stir). Once it’s liquid, add the freshly squeezed orange juice. Continue stirring, as the sugar will initially lump. Stir in the butter, sauce thickener, and grated orange zest, then season with salt and pepper.
