Scampi with strawberry sauce

Ingredients for 4 servings:

  • 16 scampi
  • 1 orange(s), untreated
  • 100 g strawberries
  • 2 tbsp maple syrup
  • 1 shallot(s)
  • 3 red peppers (piquillos), small Spanish peppers, similar to roasting peppers
  • 1 tbsp olive oil
  • 1 bunch of coriander
  • some lemon juice

Instructions

Working time approx. 30 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

Finely chop the piquillos, shallots, and cilantro. Wash the strawberries, remove the middle, and cut into small cubes. Use a zester to peel the orange zest. Juice the orange. Heat olive oil in a saucepan and sauté the piquillos and shallots. Add the maple syrup and orange juice and mix. Remove the pan from the heat and, when cool to lukewarm, add the strawberries and cilantro. Season the scampi with salt and pepper, string them onto a skewer, and sear or grill them in olive oil. Spoon the strawberry sauce onto a plate and arrange the scampi skewer on top. Garnish with fresh cilantro and orange zest and drizzle with lemon juice.
