Schnucki's oven-baked root vegetables

Ingredients for 4 servings:

  • 1 kg root vegetables (carrots, parsnips, beetroot, parsley root), to taste
  • 6 potatoes
  • 4 onions
  • 4 sprig(s) thyme, fresh or dried
  • 1 tsp caraway seeds
  • 3 tbsp olive oil
  • salt and pepper
  • 3 tbsp honey

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 25 minutes

Preheat the oven to 200°C (top/bottom heat). Peel the vegetables and cut into bite-sized pieces. Mix the spices in a mortar or bowl and add the olive oil. Mix everything well. Place the vegetables in a baking dish and season generously with salt and pepper. Then fold in the spice and oil mixture and place the dish in the oven. Roast the vegetables in the oven for 70 minutes, stirring occasionally. Finally, drizzle with honey and let it caramelize for another 5 minutes. If you like, you can also add a little garlic. This can also be prepared well in advance and placed in the oven later.
