Ingredients for 3 servings:

  • 200 g flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 50 g margarine
  • 25 g sugar
  • 4 tbsp currants
  • 1 egg(s)
  • 50 ml milk

Working time approx. 20 minutes; Total time approx. 20 minutes

English Teacakes

Makes about 10 scones. Mix the egg with enough milk to make 120 ml. Mix the flour with the baking powder and salt. Rub the margarine between your fingers. Add the sugar and enough of the milk and egg mixture (reserve a little for brushing) to make a stiff, non-stick dough. Stir in the raisins/currants. Roll out the dough to about 2 cm thick and cut out discs about 5-6 cm in diameter. Place the discs of dough on a baking tray lined with baking paper and brush with the milk and egg mixture. Bake at 220°C for about 10 minutes. Serve with strawberry jam and whipped cream.
