Seasoned turkey drumstick meat

Ingredients for 4 servings:

  • 2 turkey drumsticks
  • 2 carrots
  • 1 onion(s)
  • 3 peppercorns
  • 2 allspice berries
  • 1 small bay leaf
  • salt and pepper
  • 60 g butter
  • 5 tbsp flour
  • 1 lemon(s), juice
  • 2 glasses of white wine (Riesling)
  • some Worcestershire sauce
  • 1 pkt. cheese, grated (200 g)
  • e.g. butter flakes

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours 15 minutes

Boil the two turkey drumsticks with carrots, onion, peppercorns, allspice, and bay leaf in a little water until tender. Season with salt and pepper to create a flavorful chicken broth. Once the meat is quite tender, remove it from the broth and set it aside. While it’s still hot, remove the bones, tendons, and skin from the meat. Cut the meat into cubes and set aside. Melt the butter over low heat (it shouldn’t brown). Stir continuously. Add the flour to the melted butter. There should be no lumps, but it should still have a firm consistency. Deglaze with lemon juice, then Riesling and a few dashes of Worcestershire sauce, stirring continuously. Strain the chicken broth through a sieve and top up with it until the sauce reaches a pleasant consistency. Fold in the meat cubes. Fill ovenproof bowls or cups with the broth, sprinkle with cheese on top, and place a knob of butter in the center. Bake in a preheated oven at approximately 200°C (top/bottom heat) until the cheese is golden brown. Serve with a slice of toast.
