Semolina dumplings with strawberry sauce

Ingredients for 4 servings:

  • 500 g quark
  • 4 eggs
  • 10 tbsp durum wheat semolina
  • 1 tsp baking powder
  • 800 g strawberries, fresh or frozen
  • n. B. sugar

Instructions

Working time approx. 5 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Mix the quark, eggs, semolina, and baking powder together and let it swell for 20 minutes. Bring plenty of salted water to a boil. Dip a tablespoon into the hot water, use it to scoop out small dumplings from the semolina mixture, and drop them into the boiling salted water. Only add enough dumplings at a time so that only one layer is floating. Reduce the heat and let the dumplings simmer uncovered for 20 minutes. Drain the dumplings well. Purée the strawberries and season with sugar, if desired. Serve the sauce well chilled with the hot semolina dumplings.
