Ingredients for 4 servings:
- 500 g prawns, raw, cleaned
- 300 ml lime juice, fresh
- 400 ml orange juice, fresh
- 1 m.-sized onion(s)
- Tabasco
- sprig(s) coriander, fresh, finely chopped
- 100 ml lime juice
- Sea salt and pepper

Cebiche can also be prepared with lean fish fillets, e.g. lemon sole
First, halve the onion and soak it in lime juice for about 30 minutes. Meanwhile, mix and season all the remaining ingredients, except the prawns; it’s fine to use a little spice. Squeeze the pickled onions and add them (discard any juice). Add the prawns, stir, and refrigerate for at least 24 hours, stirring occasionally. The lime juice will cook the prawns or fish fillets. If you don’t like them raw, you can also precook the prawns. Serve with toast and butter.
