If using fresh prawns, clean them and remove the intestines. You can, of course, also prepare this dish with thawed frozen prawns. Purée the chili, turmeric, cumin, mustard seeds, ginger, garlic, and one of the two onions (chopped) in a mortar or with a hand blender until you get a paste. Add a little water to make the paste smoother. Slice the second onion and sauté in the oil. Add the curry paste and fry lightly. Now add the prawns and 200 ml of water. Cover and sauté for three to four minutes. Meanwhile, dice the mangoes and sauté for a minute or two to thicken the sauce slightly. Season with salt. Green mangoes are particularly recommended because they still have a slightly sour flavor and are firmer in the flesh.
