Ingredients for 1 servings:
- 3 large apples, e.g. Boskop, Cox Orange or Elstar
- 150 ml apple juice or other direct fruit juice
- 1 tsp organic lemon peel from half a lemon
- 3 m.-sized eggs
- 125 g butter, soft
- 300 g wholemeal spelt flour
- 3 tsp baking powder
- 1 handful of nuts, seeds or grains to taste

Mix all ingredients at room temperature. Peel the apples if desired; otherwise, wash them thoroughly, core them, and cut them into 1-2 cm cubes; this is a matter of taste. Preheat the oven to 180°C (top/bottom heat). Take three tablespoons of the apple pieces and mix them with the juice until smooth. Beat the eggs and butter for about 3 minutes until frothy, then add the finely grated lemon zest. Gradually stir in the flour and baking powder. Add the apple puree and the diced apples and stir in. Grease a 26 cm springform pan or line it with baking paper, which is my preference. Pour the batter into the pan and spread evenly. If you like, sprinkle a handful of chopped or lightly chopped nuts on top. This makes the cake a wholesome snack. Bake the cake for 40 minutes at 180°C (top/bottom heat). Do the skewer test; depending on your oven, it’s either done or almost done. This recipe is simple, inexpensive, and delicious, and tastes great on its own, in my family and I’s opinion. If you’re looking for variety or something “special,” you can also use it as a “basic recipe” and vary it as you see fit. Here are a few tips: Try using mango or pineapple juice instead of apple if you’re looking for something a bit more exotic. This also works great with pears instead of apples. The flavor becomes even more refined if you add the seeds of a vanilla bean to the creamy butter. If you like it spicier, you can add some extra zest with cinnamon, cardamom, or a gingerbread spice. A handful of your favorite chopped nuts can also be added to the batter for a bit of crunch.
