Simple green potato salad

Ingredients for 4 servings:

  • 750 g potatoes, fat-cooking
  • 1 m.-large onion(s), white
  • 2 tbsp white wine vinegar
  • 3 tbsp rapeseed oil
  • pepper
  • Salt
  • 4 tbsp chives, in rolls
  • 2 tbsp dill

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 45 minutes

Boil the potatoes with their skins on for about 30 minutes. Then peel, slice, and let cool. Dice the onion and add it to the potato slices along with the vinegar, rapeseed oil, chives, and chopped dill. Mix gently. Season with salt and pepper and let it marinate in the refrigerator for about 1 hour. It goes wonderfully with meatballs and sausages.
