Ingredients for 1 servings:

  • 4 eggs
  • 9 tbsp sugar
  • 9 tbsp flour
  • 9 tbsp oil, neutral
  • ½ pack of baking powder
  • 1 tsp, heaped lavender flowers, dried
  • 1 gr. can/n peach(s) or other canned fruit, approx. 850 g each
  • 1 packet of powdered sugar, approx. 250 g each
  • 2 tbsp water, approx.
  • n. B. Food coloring, red and blue
  • e.g. lavender (lavender branches)

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Drain the peaches well and slice thinly. Grease a square baking pan (approx. 22 cm x 22 cm) or line it with baking paper. Preheat the oven to 175°C (top/bottom heat). Mix the eggs, sugar, flour, oil, baking powder, and lavender blossoms into a batter and pour it into the pan. I always taste the batter to check the correct amount of lavender. Spread the sliced ​​fruit over the batter and bake the cake on the middle rack for about 25-30 minutes. Use a skewer to check if the cake is cooked through. Once the cake has cooled, mix the powdered sugar and water to make a glaze. If the glaze is still too stiff, add a little more water until it reaches the right consistency. If you like, you can tint it purple with red and blue food coloring. Spread the glaze over the cake and let it set. Decorate the cake with fresh lavender, if desired. Cut the finished cake into 8 slices. I’ve made this cake with peaches, apricots, nectarines, and apples. Wash the fresh fruit, remove the seeds if necessary, and slice it thinly.
