Simple Risotto Recipe: This Is How It Works

With the right ingredients, your risotto will be a success.

  1. You need 250 g of risotto rice. This is short-grain rice with a lot of starch. The starch ensures that the grains stick together, as they should in risotto.
  2. You will also need 500 ml of water and a tablespoon of vegetable stock powder.
  3. Add onion and a clove of garlic to the risotto.
  4. For sweating, you need a tablespoon of olive oil.
  5. It is seasoned with a little salt and pepper and refined with 75 g of butter.
  6. You can achieve a particularly fine taste if you add some Parmesan to the risotto.

An easy risotto recipe

Once you have everything together, start with your risotto.

  • First, make a vegetable broth from the water and powder. You won’t need it until later, but it has to be hot.
  • Peel the onions and cut them into fine pieces, as well as the clove of garlic.
  • In a saucepan, heat the olive oil and sauté the onion and garlic. Both should not turn brown but remain glassy.
  • The rice is now in the pot. It should simmer for about a minute.
  • Then immediately add the hot vegetable stock, enough to just cover the rice. Stir regularly for the next 20 minutes while the rice cooks over low heat. Tip: Swirl the pot instead of stirring. As a result, the starch comes out of the grains more slowly and the risotto does not become soggy.
  • When the rice is done, stir in the butter and season with salt and pepper. Depending on your taste, add some grated parmesan and your risotto is ready.
