Simple vegetable soup pot

Ingredients for 2 servings:

  • 1 onion(s), approx. 100 g
  • 300 g kohlrabi
  • 125 g potatoes
  • some celery, approx. 25 g
  • 75 g carrot(s)
  • 75 g leek
  • 1 tbsp, heaped margarine for frying
  • 750 ml vegetable stock
  • 50 g penne or macaroni or other pasta
  • Salt and pepper, white
  • nutmeg
  • 1 pinch of lovage powder
  • 1 pinch of harissa powder or chili powder
  • some parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel and dice the onion. Peel or trim the vegetables, cut them into cubes or slices, and weigh them. Heat the margarine in a saucepan and fry the diced onion until golden brown. Add the vegetables and sauté briefly. Stir in the vegetable stock and some of the spices, carefully adding the harissa or chili powder. Stir the penne into the vegetables. Cover the pan, bring to a boil, and then simmer for about 15-20 minutes. Stir occasionally. Chop the parsley and add it. Season to taste and adjust the seasoning if necessary, then serve.
