Sina's favorite potato salad

Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 1 cucumber(s), less depending on size
  • 70 ml wine vinegar or Old Master vinegar, possibly more
  • 2 tbsp water, more if needed
  • 1 tsp, levelled pepper, white
  • 1 tsp, leveled salt, more if needed
  • 250 g mayonnaise
  • 2 tbsp olive oil
  • possibly onion(s), optional
  • some parsley, fresh

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

with cucumber and mayonnaise

Boil the potatoes with their skins on. This takes about 15-30 minutes, depending on their size. Once the potatoes have cooled (although you can also peel them while warm), peel them off and slice them as desired. Toss with vinegar, olive oil, salt, and pepper. If you like, you can also add a finely diced onion. Let it sit for a while. Peel the cucumber and slice it thinly. The thinner the slices, the better it tastes. Mix in the cucumber slices and mayonnaise and let it sit for a while, ideally. Can be prepared a few hours in advance. Store in the refrigerator. Remove from the refrigerator 15 minutes before serving.
