Smokey's mozzarella with bacon curry dressing

Ingredients for 2 servings:

  • 2 balls of buffalo mozzarella
  • 2 handfuls of arugula, prepared
  • 1 large carrot(s)
  • 6 slices of bacon
  • 1 tbsp vinegar
  • 2 tbsp olive oil
  • 1 tsp, heaped mustard, hot
  • 1 clove(s) garlic, squeezed
  • 100 ml broth
  • 1 tsp soy sauce
  • 1 tsp honey
  • 1 tbsp, heaped curry powder
  • ½ small chili pepper(s), finely chopped
  • 1 spring onion(s), cut into fine rings
  • 1 tbsp, heaped sesame seeds, roasted without fat
  • Salt and pepper from the mill

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Light dinner

Halve the bacon lengthwise and then cut into small squares. Fry in a pan without fat until crispy, remove from the pan, and let cool on kitchen paper. Peel the carrot and slice into fine strips, mix with the arugula, and arrange on two plates. Slice the mozzarella and arrange on the salad. For the dressing, mix all ingredients well and stir in the bacon. Drizzle the dressing generously over the mozzarella, ensuring some also runs over the salad.
