Smokey's Zucchini "Saltimbocca"

Ingredients for 2 servings:

  • 1 large zucchini
  • 10 sage leaves
  • 5 slices of raw ham
  • 1 tbsp olive oil
  • n. B. Pepper, from the mill
  • n. B. Salt
  • Parmesan, in a piece

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Light summer meal, suitable for SiS

Cut the zucchini into 10 slices, each approximately 2 cm thick. Blanch in salted water for 1-2 minutes, drain well, and let them wilt. Halve the prosciutto slices lengthwise. Season the zucchini slices with pepper and salt, place a sage leaf on each zucchini slice, and wrap them in the prosciutto. Fry the zucchini parcels in hot oil until crispy on both sides. Place the zucchini saltimbocca on two plates and grate Parmesan cheese directly over them using a vegetable peeler. Serve with tomato salad or simply on a fresh baguette. Tip: Large zucchini are particularly well-suited for this dish.
