Soba noodles with vegetables

Ingredients for 2 servings:

  • 250 g soba noodles (Japanese buckwheat noodles)
  • 500 g vegetable mix, frozen (e.g. peas and carrots)
  • 200 ml water
  • 1 tsp ginger powder
  • 5 tbsp soy sauce
  • Lemongrass, to taste
  • 1 pinch of cumin powder
  • 2 tsp five-spice powder
  • Salt and pepper, to taste
  • 1 tsp peppercorns, pink

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

not traditional, but delicious

Place the frozen vegetables in a pot with the spices and water and cook until tender. Meanwhile, cook the pasta in plenty of salted water according to the package instructions. Drain the pasta in a colander and add it to the vegetables. Mix well and serve.
