Sour cherry ketchup

Ingredients for 1 servings:

  • 750 g sour cherries, pitted
  • 150 g onion(s), diced
  • 30 g ginger, peeled and sliced
  • 1 ½ tsp oil
  • 75 g brown sugar
  • 200 g sugar
  • 60 ml red wine vinegar
  • ½ tsp orange peel
  • 125 ml orange juice
  • 1 pinch of cayenne pepper
  • 1 pinch of allspice powder
  • 1 pinch of cinnamon powder
  • salt and pepper

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Sauté the onions and ginger in a pan with the oil until translucent. Add the cherries, both types of sugar, vinegar, orange zest, and juice. Adjust the spices to taste. Let everything simmer with the lid on for 20 minutes. Blend until smooth and bring back to a boil until the desired consistency is reached. Season to taste. Pour the cherry ketchup into prepared, clean bottles or jars. If using jars, boil it in a 90°C water bath for 30 minutes.
