Ingredients for 4 servings:

  • 250 g zucchini
  • 250 g eggplant(s)
  • 500 g tomatoes, peeled, from the can
  • 600 g minced beef
  • 2 onions
  • 2 garlic cloves
  • 250 g rice, long grain rice
  • rosemary
  • Thyme
  • Salt
  • Pepper, freshly ground
  • 150 g cheese, freshly grated Gouda

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat the oil in a pan and brown the ground beef. Peel and finely dice the onion and garlic, then sauté. Stir everything well occasionally to form small meatballs. Wash the zucchini and eggplant. Slice the zucchini and dice the eggplant. Add both to the meat along with the tomatoes and tomato juice, and season with the spices and herbs. Cover and simmer for about 25 minutes. Meanwhile, cook the rice until tender. Then add the rice to the ground beef and vegetable mixture and pour everything into a greased casserole dish. Sprinkle with grated Gouda cheese and bake at 250°C for 25 minutes.
