Soy fillets with vegetables and rice

Ingredients for 2 servings:

  • 140 g soy fillet(s)
  • 150 g zucchini
  • 100 g bell pepper(s)
  • 150 g cauliflower
  • 150 g rice or green spelt
  • 1 dash of tomato ketchup
  • some vegetable broth
  • Soy sauce
  • salt and pepper
  • Paprika powder
  • Cayenne pepper
  • curry
  • cumin
  • 2 dashes lemon juice
  • e.g. sunflower seeds or sesame, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Vegan, low-fat, healthy and delicious

Chop the vegetables, blanch the cauliflower, and cook the rice or green spelt. Briefly sear the soy fillets (best in a wok) and season to taste (e.g., pepper, salt, paprika, cayenne pepper, curry). Remove from the wok, add the chopped vegetables (you can swap them as desired) and fry in a little oil. Add a little vegetable stock and ketchup, and season well. Add the fillet pieces to the pan, arrange everything on plates with the rice, and drizzle with a squeeze of lemon juice. Sprinkle with a few sunflower seeds or sesame seeds, if desired, and enjoy.
