Ingredients for 2 servings:

  • 1 bunch of radishes
  • 1 tbsp, heaped Wakame, dried
  • 4 tbsp soy sauce
  • 2 tbsp water
  • 2 tbsp maple syrup
  • 2 tbsp apple cider vinegar
  • 1 tbsp sesame oil, dark
  • ½ bunch coriander for sprinkling

Working time approx. 10 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 10 minutes

Soak the wakame for at least 2 hours, then squeeze out any excess water. Depending on their size, quarter or halve the radishes. For the marinade, combine soy sauce, water, maple syrup, apple cider vinegar, and sesame oil. Add the radishes and seaweed to the marinade and let it sit in the refrigerator for 4 hours, stirring occasionally. Before serving, sprinkle the radishes with coriander leaves and, if using, radish leaves. Tip: Marinate in the refrigerator for 2 to 3 days to enhance the flavor.
