Soy spaetzle without carbohydrates

Ingredients for 2 servings:

  • 200 g soy flour
  • 4 eggs
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Mix the soy flour and eggs with your hands and add salt. Then, take a plastic cutting board and place some dough on it. Scrape it into a pot of boiling salted water using a butter knife or similar tool. Always use thin pieces of dough. Then cook them for about 10 minutes, until they are soft. The spaetzle have a slightly nutty flavor from the soy flour. However, they only have 4g of carbohydrates per 100g. It tastes really good as a side dish to goulash! You can find soy flour at organic supermarkets.
