Spaghetti ai Funghi alla Maria

Ingredients for 4 servings:

  • ¼ liter vegetable broth
  • ½ tsp dried herbs (pizza herbs)
  • 1 onion(s)
  • e.g. garlic or garlic granules
  • 500 g mushrooms, fresh
  • 500 g spaghetti, or other pasta
  • e.g. salt and pepper
  • 1 tbsp oil
  • 2 tsp flour
  • 200 g sour cream or creme fraiche
  • 40 g Parmesan, grated
  • e.g. tomato paste

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Finely dice the onion, chop or press fresh garlic. Slice the mushrooms. Cook the pasta for about 8 minutes until al dente. Sauté the onion and garlic in oil, then add the mushrooms and fry. Sprinkle with flour and sauté. Deglaze with vegetable stock, bring to a boil, stir in the sour cream, tomato paste, and herbs. Simmer for about 5 minutes. Season the sauce with salt and pepper. Mix the cooked pasta with the sauce and serve sprinkled with Parmesan cheese.
