Spaghetti with cocktail tomatoes

Ingredients for 4 servings:

  • 700 g cocktail tomatoes, halved
  • salt and pepper
  • 250 g Parmesan, grated
  • 2 garlic cloves, crushed
  • 100 g pine nuts, roasted without fat
  • 1 bunch of basil leaves
  • 6 tbsp olive oil, possibly up to 8 tbsp
  • 500g spaghetti

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 10 minutes; Total time approx. 6 hours 40 minutes

Place the halved tomatoes in a large bowl and season generously with salt and pepper. Sprinkle with Parmesan cheese and crushed garlic. Scatter over the pine nuts, then sprinkle with basil. Drizzle with olive oil. Let the tomatoes soak overnight, ideally. Boil water, cook the spaghetti until al dente, stir in while hot, and enjoy! The “sauce” only warms up from the spaghetti. It’s a delicious dish on hot days and is also easy to prepare for guests.
