Spaghetti with green asparagus

Ingredients for 2 servings:

  • 10 stalk(s) asparagus, green
  • 1 garlic clove(s), diced
  • some olive oil
  • some white wine
  • 4 tomatoes, diced
  • salt and pepper
  • 5 basil leaves
  • 3 stalks of coriander
  • 3 stalks of flat-leaf parsley
  • 3 sprigs of oregano
  • 1 chili pepper(s)
  • 200g spaghetti
  • some Parmesan, sliced

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Clean, wash, and slice the asparagus. Add a little olive oil to a pan and sauté the asparagus and garlic cubes. Deglaze with white wine and simmer for a few minutes. Add the diced tomatoes and chili pepper to the asparagus and simmer for another 5 minutes. Remove the pan from the heat. Finely chop the herbs and stir them in. Meanwhile, cook the spaghetti in plenty of salted water until al dente. Drain the pasta and add it to the vegetables in the pan, stirring. Serve on plates and sprinkle with shaved cheese.
