Spaghetti with mini mozzarella and tomato sauce

Ingredients for 4 servings:

  • 500 g spaghetti or other pasta
  • 1 ½ onions
  • 3 garlic cloves
  • 10 tbsp olive oil, good quality
  • 500 ml vegetable stock
  • 7 tbsp tomato paste
  • 5 sprigs of thyme, fresh
  • 350 g cherry tomatoes
  • 12 balls of mini mozzarella
  • 1 bunch basil, fresh

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Finely dice the garlic and onion and sauté in 3 tablespoons of oil. Add the tomato paste and fry. Deglaze with the vegetable stock. Pick the thyme leaves and add them. Season with salt and pepper and simmer for 10 minutes. Prepare the spaghetti according to the package instructions. Halve the tomatoes, fry them in 3 tablespoons of olive oil, and add them to the sauce. Arrange the pasta, tomato sauce, and mozzarella on plates and drizzle each with a tablespoon of olive oil. Sprinkle with pepper and garnish with basil leaves.
