Spaghetti with saffron sauce

Ingredients for 2 servings:

  • 1 onion(s), finely chopped
  • 100 ml white wine
  • 2 tbsp olive oil
  • ½ tsp saffron threads (not powder!)
  • 2 tbsp butter, well chilled
  • 400 g cream
  • 200g spaghetti
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Briefly heat the saffron threads in a pan, then dissolve them in about 3 tablespoons of warm water. Heat the oil in a deep pan, sauté the onions, then deglaze with white wine. Add the cream and simmer over low heat for 10 minutes. Meanwhile, cook the spaghetti until al dente. Add the cold butter in pieces to the sauce and stir with a whisk until the sauce thickens. Add the saffron and season to taste with salt and pepper. Drain the spaghetti, toss with the sauce, and serve immediately.
