Spaghetti with scampi in white wine sauce

Ingredients for 2 servings:

  • 250g spaghetti
  • 2 garlic cloves
  • 1 chili pepper(s), red
  • 2 spring onions
  • 2 tbsp olive oil
  • 250 g scampi, ready to cook
  • 100 ml cream
  • 85 ml dry white wine
  • 2 tbsp tomato paste
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cook the pasta al dente in plenty of salted water according to the package instructions. Meanwhile, peel and chop the garlic. Wash the chili and spring onions. Chop the chili and cut the spring onions into rounds. Pat the scampi dry with kitchen paper. Heat olive oil in a pan and fry the scampi for one minute. Turn over and add the garlic, chili, white wine, cream, tomato paste, and spring onions. Simmer for two minutes. Season well with salt and pepper. Add the pasta and mix everything together. Season again with salt and pepper and serve.
