Ingredients for 4 servings:
- 1 garlic bulb(s) (single-clove garlic), chestnut-sized
- 6 chili peppers, fresh
- 50 ml olive oil
- 2 tbsp tomato paste
- 4 tbsp molasses (melaza de caña)
- 1 tbsp wine vinegar
- 3 tbsp tomato paste
- 3 tbsp Dijon mustard
- 3 tbsp Worcestershire sauce
- 1 tsp black pepper, freshly ground
- 1 tsp salt
- 50 ml water
- 1 ½ kg spare ribs
- 6 bread dumplings, ready-made

Finely chop the chestnut-sized garlic clove and halve the chili peppers lengthwise, leaving the seeds intact. Place both in a pot with the remaining marinade ingredients and simmer for 15 minutes, stirring occasionally. Wash the spare ribs, pat dry, and cut into 4 equal pieces. Place the spare ribs in a sealable plastic container and pour the now slightly cooled, lukewarm marinade over them. All parts of the meat should be covered in the marinade. Place the sealed plastic container in the refrigerator overnight. Alternatively, a sealable freezer bag can be used instead of the plastic container. This has the advantage that all parts of the meat are coated with the marinade by swirling it around. The next day, 2 hours and 15 minutes before consumption, preheat the oven to 170°C (fan oven) and roast the spare ribs uncovered in a non-stick roasting pan for 2 hours. Reserve the remaining marinade. After 2 hours, increase the oven temperature to 210°C and continue roasting the spare ribs for 10 minutes. Meanwhile, about 40 minutes before the end of the roasting time, soak the store-bought bread dumplings in cold water for 15 minutes, then place them in boiling water for 3 minutes, and then let them stand for 15 minutes. Then, rinse the dumplings and remove the foil. Please follow the manufacturer’s instructions: preparation may vary slightly depending on the type. Serve the ribs with the dumplings, a little marinade, and vegetables of your choice.
