Spicy apple soup à la Maja

Ingredients for 4 servings:

  • 4 m.-sized apples
  • 2 bell peppers, red
  • 1 m.-large cucumber(s)
  • 2 m.-sized garlic cloves, pressed
  • ¾ liter meat broth
  • 1 tbsp butter
  • 2 tsp sugar
  • 4 pinches of pepper
  • 2 dashes Tabasco, to taste
  • 1 tsp, leveled salt
  • 100 ml cream

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

First, core and dice the apples, bell peppers, and cucumber. Then, briefly sauté them with the crushed garlic in the melted butter, then pour in the meat broth. Add the spices and sugar—start carefully, as you don’t want it to taste too sweet. Let it simmer for about 15 minutes, then puree with a hand blender. Finally, pour in the cream and bring back to a boil briefly. Add a little Tabasco, if desired. Tip: If you like, garnish with 2-3 strips of mixed bell pepper and some chives when serving.
