Spicy banana soup

Ingredients for 4 servings:

  • 2 bananas
  • 50 g hazelnuts or peanuts
  • 2 tbsp sugar
  • 250 ml vegetable stock
  • 100 ml coconut milk or whipped cream
  • 1 tsp curry powder
  • 3 dashes lemon juice
  • 1 tbsp tomato paste
  • chili flakes
  • Cayenne pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with caramelized nuts

Roughly chop the hazelnuts or peanuts. Caramelize the sugar in a pan, then add the nuts and stir. Add the tomato paste and the peeled, lightly mashed bananas one at a time, stirring constantly. Pour in the vegetable stock and reduce slightly, adding more water frequently. Season to taste with the spices, cream or coconut milk, and lemon juice. Once the mixture reaches a creamy consistency, reduce the heat. Serve warm to lukewarm. Garnish with banana slices and grind chili flakes over the top. This recipe serves 4 people as a small course in a meal.
