Ingredients for 1 servings:

  • 1 small white cabbage, small
  • 1 onion(s)
  • 1 stalk(s) leek
  • 3 carrots
  • ¼ celery root
  • 1 bell pepper(s), yellow
  • 1 can of tomatoes, pureed
  • 2 tbsp tomato paste, spicy
  • 200 ml water
  • 2 tbsp vegetable broth (instant powder)
  • 1 tbsp parsley, chopped

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cut the white cabbage into strips, dice the onion, carrots, celery, and bell pepper, and slice the leek into rings. Briefly fry the cabbage, onion, and leek in a non-stick pan without adding any fat. Add the passata, vegetable broth, and remaining vegetables, and let the soup simmer. Finally, sprinkle with parsley and serve. Tip: This recipe is perfect for a filling day without counting. You don’t need to add any PP values, and you can adjust the amount to your liking.
