Spicy carrot soup

Ingredients for 4 servings:

  • 1 kg carrot(s)
  • 2 large potatoes
  • 3 onions
  • 1 tbsp butter
  • 4 tbsp olive oil
  • 1 pinch of chili powder
  • 3 tsp ginger powder
  • 3 tsp curry powder
  • 2 tbsp sugar
  • 2 liters of vegetable broth
  • salt and pepper
  • possibly parsley
  • possibly chives
  • possibly pepper, mixed

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean and dice the carrots and potatoes. Peel and finely dice the onions. Heat the butter and oil in a pan and sauté the carrots, potatoes, and onions. Add the chili powder, ginger, curry powder, salt, and sugar and sauté for another 5 minutes. Transfer everything to a saucepan and add the broth. Simmer over medium heat for about 30 minutes. Season the soup to taste with spices and pepper. If desired, garnish the soup with carrot strips, leek rings, or herbs (such as parsley or chives), as well as mixed peppercorns, and serve.
