Spicy chickpea salad

Ingredients for 4 servings:

  • 1 onion(s), finely chopped
  • 1 pepper, red, cut into strips
  • 4 tbsp olive oil
  • 1 tsp garam masala
  • 1 tbsp cumin
  • 2 limes
  • 400 g chickpeas, cooked and drained
  • ½ red chili pepper(s)
  • 2 tbsp parsley, chopped
  • 180 g fresh leaf spinach
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat the olive oil in a pan. Fry the onion and peppers until softened. Add all the spices and cook for another minute. Halve the limes, cut the flesh into segments, and roughly chop. Add the chickpeas and flesh to the pan, remove the pan from the heat, then add the chili, spinach, and parsley and mix well.
