Spicy chicory salad

Ingredients for 4 servings:

  • 500 g chicory
  • 1 onion(s)
  • 200 g natural yogurt (0.1%)
  • 2 tbsp rice vinegar
  • 2 tsp mustard, medium hot
  • 1 tsp sugar
  • 2 tbsp rapeseed oil
  • Salt
  • Pepper, white
  • 2 tbsp parsley, frozen or herb mix
  • e.g. Sultanas (for sprinkling)
  • e.g. walnuts (for sprinkling)

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Halve the chicory, remove the bitter stalk in the middle, and cut the chicory into strips. Soak the strips in warm water for 10 minutes, then drain and rinse thoroughly. This will reduce the bitterness to a pleasant level. Prepare the marinade from the other ingredients and pour it over the chicory. Let it marinate in the refrigerator for at least 1 hour, then remove it 15 minutes before serving to prevent it from cooling. Sprinkle with sultanas and walnuts, if desired.
